It’s so easy to make these wedges and the method is the same for any flavours you may want to experiment with. They make a great little side for any dinner or even a satisfying appetizer if served with dips.
Prep Time: 5 mins | Cooking Time: 40 mins | Serves: 2-3
2 white potatoes
2 tablespoons Rapeseed oil
Piri Piri spice
- Pre-heat oven to 180°C.
- Wash your potatoes.
- Using a sharp knife, prepare your potatoes on a chopping board, cutting them into wedges length ways.
- Place the wedges on the baking tray and drizzle over approximately 2 tablespoons of rapeseed oil (just enough to ensure the potatoes are lightly covered).
- Sprinkle them with Piri Piri spice, mixed herbs, some black pepper, and a little salt. Before putting the wedges back in the oven, ensure the wedges are positioned on their curved side as I find this helps them crisp nice and evenly as the heat can reach more surface area of the wedges.
- Place them in the oven to cook for approximately 40 minutes until golden and crispy.
