Piri Piri & Mixed Herb Wedges

It’s so easy to make these wedges and the method is the same for any flavours you may want to experiment with. They make a great little side for any dinner or even a satisfying appetizer if served with dips. 

Prep Time: 5 mins | Cooking Time: 40 mins | Serves: 2-3

Ingredients final

2 white potatoes

2 tablespoons Rapeseed oil

Piri Piri spice

Mixed herbs

Salt

Pepper

Method final

 

 

  1. Pre-heat oven to 180°C.
  2. Wash your potatoes.
  3. Using a sharp knife, prepare your potatoes on a chopping board, cutting them into wedges length ways.
  4. Place the wedges on the baking tray and drizzle over approximately 2 tablespoons of rapeseed oil (just enough to ensure the potatoes are lightly covered).
  5. Sprinkle them with Piri Piri spice, mixed herbs, some black pepper, and a little salt. Before putting the wedges back in the oven, ensure the wedges are positioned on their curved side as I find this helps them crisp nice and evenly as the heat can reach more surface area of the wedges.
  6. Place them in the oven to cook for approximately 40 minutes until golden and crispy.
  7. Serve & Enjoy!
