A quick and easy zesty side of crunchy goodness! This is a great compliment to salads, sandwiches, or even a makes a good little snack on its own.

1 large carrot grated using a Julienne peeler
A handful of finely sliced red cabbage (not diced)
1 chopped spring onion
For the dressing:
1 teaspoon of yellow mustard
1 tablespoon of cyder vinegar
1 teaspoon of balsamic vinegar
2 teaspoons of olive oil
A pinch of salt & black pepper
Juice of 1/2 a lemon
1 crushed garlic clove
- Begin by preparing your red cabbage and carrot on a chopping board.
- Place these ingredients into a salad bowl and sprinkle over the chopped spring onion.
- In another small bowl whisk together all the ingredients needed for the dressing, and drizzle this over the cabbage, carrot and spring onion.
- Serve on the side and enjoy!
