An ‘easy peasy’ delicious Italian-inspired lunch – full of flavour!

Ingredients final

Olive bread baguette

1 teaspoon of mayonnaise

1 teaspoon of green Pesto

Rocket

Watercress

Spinach

1/2 of a tomato sliced

Feta cheese

Finely sliced Cheddar cheese

freshly chopped basil

1 teaspoon of Balsamic Vinegar

1 teaspoon of Olive oil

A sprinkle of black pepper

 

 

Method final

  1. Cut your olive bread baguette to desired size and then cut horizontally through the middle, not vertically down the middle like you would do with a hot dog baguette.
  2. Spread your mayonnaise and pesto on one side, then layer on the rest of the ingredients in this order: salad leaves (rocket, watercress and spinach), sliced tomato, Feta, Cheddar, and freshly chopped basil.
  3. Then drizzle over the balsamic and olive oil, then sprinkle over some black pepper.
  4. Serve and enjoy!
