An ‘easy peasy’ delicious Italian-inspired lunch – full of flavour!

Olive bread baguette
1 teaspoon of mayonnaise
1 teaspoon of green Pesto
1/2 of a tomato sliced
Finely sliced Cheddar cheese
freshly chopped basil
1 teaspoon of Balsamic Vinegar
1 teaspoon of Olive oil
A sprinkle of black pepper
- Cut your olive bread baguette to desired size and then cut horizontally through the middle, not vertically down the middle like you would do with a hot dog baguette.
- Spread your mayonnaise and pesto on one side, then layer on the rest of the ingredients in this order: salad leaves (rocket, watercress and spinach), sliced tomato, Feta, Cheddar, and freshly chopped basil.
- Then drizzle over the balsamic and olive oil, then sprinkle over some black pepper.
- Serve and enjoy!
